食のCO₂排出量の認知を目的としたフードデザインツールの開発と認知効果の評価

Abstract: Approximately 12% of Japan’s greenhouse gas emissions come from foodrelated CO₂ emissions, making it an urgent issue to reduce the environmental impact of food consumption. To make consumers aware of the environmental impact of food, it is essential to establish a food CO₂ emission database, develop teaching materials and tools, and promote them through events. However, there are few studies that systematize these connections, and the problem is that the recognition effect for all targets is weak because they are considered separately from the taste and health that consumers are conscious of. In this study, we developed a food CO₂ emission database and a food design card and tangible food design game that consider both health and the environment based on it. As a social experiment, we conducted workshops for a wide range of ages from pre-school children to adults, and the effect of increasing awareness of CO₂ emissions from food became clear. As a result, the approach to consumers about the environment became clear, and it was able to contribute as a new awareness tool for the CO₂ emissions of food for all consumers.
